During these days of March 2023 the coffee cherries picked from @pablochuyestates are drying under shade, following Rubens’ fermentation and drying protocol to increase the shelf life and to highlight the true terroir of these coffee lots. Rubens’ wife @kateorellanaa is supervising the operation.
Most of what you see in this video is going to compose the recipe of our #Cignobianco signature espresso blend. The best lots will be also available as single-origin lots.

Fresh crop Peru has just arrived, and it’s a beautiful representation of the cozy central America washed coffee profile. El Mango is a crisp and approachable coffee that demonstrates a balance of almond with crisp golden apple and a noticeable honey-like sweetness finish.

V60 style
coffee 17g, water 250g at 40 tds and 90 celsius, grind medium 19 clicks on Comandante, first pour 34g for 30 seconds, slowly add the rest of the water in circular moves without any pause aiming to keep a constant amount of water above the coffee ground. Total brew time 2:50, total coffee tds 1,48
THE FARMER
Daniel Chilcon Flores is the owner of 3 hectares of land, on which he cultivates coffee, in the El Diamante village of San Jose de Lourdes district. The region of El Diamante is home to protected forests with a variety of flora and fauna native to the region, alongside several water sources which supply much of the water to the city of Jaén. As well as providing a beautiful and thriving natural environment to grow coffee, the biodiversity of the area contributes to the richness and stability of its soils. Daniel grows Catuai and Pache varietals, and all of his land is located at the altitude above 1900 masl. Some of Daniel’s family also grow coffee in the area, and the family manage the farms together. Whilst each family member owns their own land, including Daniel, it is his son, Roger, who manages the picking, processing and drying of the coffee.

Yesterday we received these photos from Mr. Dison who supervised the fermentation process, the milling and the beans selection. He hired and trained these women to remove all defected coffee beans.

The first Panama Geisha of the year is here! Over the course of many years, @jansoncoffee has received numerous Best of Panama awards due to its constant focus on quality improvement.
Hacienda Las Lagunas produces several different Geisha lots each year, identified by a lot number that depends on the applied fermentation and coffee cherry picking period.
We received several of Hacienda Las Lagunas Geisha's samples and the lot number 883 was Rubens' favourite on the blind cupping table.

For the first time, we are happy to present this supernatural Wubanchi from Ethiopia!
This lot has a unique complexity, due in part to the special processing.
Incredibly clean and fruity, with delicate floral notes of elderflower and rose.
Dynamic yet refined, it made us fall in love with it right away.

THE STORY
Guji Wubanchi station is a cherry-processing facility in Mesina, Guji zone. This region borders the now famous Yirgacheffe district, the coffees from which have dominated specialty production for a number of years. The combination of high altitude, fertile soil, consistent and plentiful rains, and an abundance of local knowledge are all contributing factors to the high status of Yirgacheffe coffees. The station is situated at 1,980 masl and processes cherries from hundreds of local smallholder farmers. ‘Supernatural’ is their processing method which augments the traditional natural sun-drying process by creating the environment for controlled aerobic fermentation in the drying phase.
