 THE STORY BEHIND

Finca La Aurora is a project devoted to the production of high quality Geishas and other SHB coffees in a sustainable environment, preserving at maximum the flora and fauna of the farm.
It is located between 1.570 and 1.770 mts in the highlands of Candela, close to the border of Panama and Costa Rica.
The Finca is comprised of 30 hectares, 14.5 of which are farmed, and the rest remains pristine highland tropical forest. Shade is provided by native trees and the area has a stable micro climate without a lot of difference in temperature between day and night. The high altitude also calls for a later harvest and the combination of this with the forest and shade provides for a limited-supply, highly complex beans.
The farm was started in 2006 and yielded this year approx. 2000 kg of Geisha and 700 kg of Tekisic. The harvest is done 100% manually at the peak of ripeness – especially for the natural Geisha for this lot only very ripe, middle or late harvest cherries are used. The pickers are paid a premium to encourage careful picking of only the very ripe cherries.
After collection and selection in the field the cherries for the natural Geisha are hand-carried to the process area on the farm and laid on African drying beds. It will take between 20 and 30 days to complete the drying process
