To help you make the best out of your coffee, Rubens has crafted recipes for brewing this particular lot in filter.

There are two recipes: one for conical brewer (think V60) and one for flat-bottom brewer (think Kalita), however you can surely brew our coffees with any other brewing device, such as immersion brewers.

Please remember that these recipes are intended as starting points and may require further adjustments if the equipment you use is not identical to the one in the recipe; the characteristics of water used can also make a big difference in brewing.

Finally, the recipes suited specifically to Rubens’ roasting style, hence we do not guarantee that they will work as a universal reference.

STORY BEHIND

Peñas Blancas is a coffee farm located in Acevedo, Huila, Colombia, at elevations ranging from 1,600 to 1,900 meters above sea level. The farm cultivates varieties such as Java, Geisha, Caturra, and Castillo, using both washed and natural processing methods. It also works closely with smallholder farmers throughout the region to produce exceptional specialty coffee.

More than just a coffee farm, Peñas Blancas is a social project dedicated to improving working conditions and supporting the development of local coffee producers. By providing access to modern infrastructure, technical training, and centralized quality control, the project enables farmers to achieve higher specialty coffee standards while gaining more stable access to international markets.

The project is led by Nestor Lasso and Jhon Vergara, two renowned coffee professionals from Huila recognized for their expertise in experimental processing, post-harvest innovation, and farmer education. Under their leadership, Peñas Blancas has become an important hub for specialty coffee innovation, transparent collaboration, and community development in the Acevedo region.

THE VARIETY

Yellow Bourbon is a rare mutation of the Bourbon variety, prized for its natural sweetness, balance, and elegant cup profile. Renowned for producing refined and expressive coffees, it develops exceptional complexity when grown at high elevations and carefully processed.

In this natural lot from Peñas Blancas, Yellow Bourbon delivers a vibrant and layered cup with pronounced sweetness, a silky texture, bright fruit complexity, and a clean, crisp finish.

THE FERMENTATION PROCESS

This coffee is processed using the natural method, where the cherries are dried with the fruit intact. This process enhances sweetness, body, and aromatic intensity while encouraging the development of rich fruit-forward flavors.

Careful post-harvest management and controlled drying preserve clarity in the cup, allowing deeper fruit complexity to develop without sacrificing balance or cleanliness.

The combination of the Yellow Bourbon variety and natural processing results in an expressive, layered cup that is structured, balanced, and exceptionally clean.
