THE STORY BEHIND

Luis Anibal Calderon has dedicated his life to cultivating unique coffee varieties on his father's farm, on which he started helping and working when he was just nine. Luis' passion for exploring the limits of coffee plants has led him to create a true arboretum of exotic cultivars, making him a prominent figure in the world of specialty coffee. Among his crops, the renowned Pink Bourbon stands out as a testament to his ability to grow rare and intriguing varieties, which, processed with the anaerobic natural method, is one of Villa Betulia’s treasures.

His farm, Finca Villa Betulia, located in Acevedo, in the Huila region, benefits from a unique microclimate at 1600 masl. This environment slows fruit maturation and allows for extended fermentations, enhancing the cup's quality. Guided by Cofinet, in 2019 Luis implemented an agroforestry system by planting native trees among his coffee rows. This practice has reduced the need for fertilizers, preserved the soil, and further refined the sensory profiles of his coffees. That same year, he added 2000 Yellow Bourbon trees, 9000 Pink Bourbon, 2000 Gesha, and 1000 Tabi trees to his farm.

Luis is celebrated not only for his dedication to collecting and cultivating extraordinary varieties but also for the constant innovation he brings to his farm, making it a hub of discovery and creativity.

Villa Betulia (Colombia) The Story

THE VARIETY

Cultivated from hybrid of Red and Yellow Bourbon, Pink Bourbon is said to have been initially found in Pitalito, Huila. Pink and Orange Bourbons are very difficult to produce with consistency. The recessive genes leading to the expression of colours  are easily thwarted by the presence of yellow and red genes in a given pollen grain.

A carefully isolated and contained lot can do quite well and preserve the unique colour and character of this variety, though such lots are quite hard to find. Pink Bourbon has a substantial amount of glucose which has been thought to help give the coffee its more delicate, soft, and complex profile.

THE FERMENTATION PROCESS

The cherries are meticulously hand-sorted before being subjected to six days in anaerobic tanks.

They are then floated and hand-sorted once again before drying.
