 THE STORY BEHIND

The Rayyan Mill is an idea brought about by three friends searching for premium Yemeni coffee. They found coffees with amazing aromas and flavours and farmers that were friendly and hospitable. Unfortunately, due to inconsistency in sourcing and processing, they also found that the same bag of Yemeni coffee that gave amazing aromas and flavours could also give unpleasant odours in the very next cup!
Ryann mill established in the winter of 2011/2012 their own mill in the capital of Sana’a and began sourcing coffee from the best places.

The uniqueness of Yemen coffee can be attributed to the uniqueness of Yemen itself. Yemen coffee developed through the centuries isolated from the offspring of those smuggled beans that gave birth to coffee in the rest of the world. In Yemen coffee is traditionally grown at high elevations in harsh environments receiving little rainfall. As a result the varietals that developed in Yemen had to survive a harsh climate. They are the result of centuries of adaptation to these unique conditions - thus the varietals themselves are unique to Yemen. In addition the added stress of these conditions on the plants increases the amount of nutrients and sugars pushed to the cherries which ultimately increases cup complexity. Due to the lack of rainfall, Yemen coffee has always been sun-dried (natural) further increasing the sweetness of the cup. Ultimately Yemen coffee and its history are much like Yemen itself: mysterious, intriguing and complex.

The folks at Rayyan Mill have been sourcing this lot from a small but fierce tribal community in the mountains of Hajja since 2013. The tribesmen in this community are not keen on change, but over the years Rayyan Mill has earned their respect and trust by dealing with them fairly and honestly. This year (2016) a few farmers indicated they would like to implement pruning methods new to them as well as raised beds for drying! Annual production is 2-3 tons.

This year Rayyan Mill was able to identify a few farmers who went above and beyond in the care of their coffees. They separated those lots out as “Single Farm” lots, of which this is one of them!
