We freshly roast to order all coffees on Monday, Wednesday and Friday (excluding national holidays), and ship the same day! Cut-off time is 11:59pm (UTC+1) of the day before the roast day. *We only ship whole beans*
Negele Gorbitu comes from the highlands of Yirgacheffe, in southern Ethiopia — a region widely recognised as one of the birthplaces of Arabica coffee. Here, coffee is deeply intertwined with daily life, culture, and the surrounding landscape, growing naturally among native trees and food crops in a rich, biodiverse environment.
The coffee is produced by members of the Negele Gorbitu Cooperative, founded in 1975 and now bringing together over a thousand smallholder farmers. Each producer cultivates small plots of land, where coffee is hand-picked at peak ripeness, preserving the integrity and quality of the cherries.
Ethiopian Heirloom stands among the most treasured varieties in the world of coffee. Grown at high altitudes in Ethiopia’s lush, mountainous regions, it embodies the very essence of complexity and depth.
What makes this variety truly special is its wild, non-hybrid nature. Cultivated by smallholder farmers using traditional methods passed down through generations, each plant is a natural mix of countless indigenous varieties — a living expression of Ethiopia’s extraordinary genetic diversity.
The country’s unique terroir — volcanic soil, ideal altitude, and balanced climate — plays a key role in shaping the character of these beans. The result is a cup defined by its aromatic richness: bright fruit, delicate florals, and subtle spice intertwine with a silky body and lively acidity.
Often referred to as the birthplace of coffee, Ethiopia offers in its Heirloom varieties a return to authenticity — a reminder of coffee’s origins and its unmatched diversity. Every cup tells a story of heritage, nature, and craftsmanship that continues to inspire coffee lovers around the world.
In the natural process, only ripe, shade-grown cherries are accepted at the mill and carefully hand-sorted. They are laid out on raised African beds to dry in the sun for 12 to 15 days. Throughout the process, the cherries are regularly turned to ensure even drying. To preserve quality, they are covered during the hottest hours of the day and protected from moisture and rain at night.
Once the ideal moisture level is reached, the lot is milled, graded, and meticulously hand-sorted before being sealed in GrainPro and shipped.
