CAPAL Cooperative entered the international coffee sector in 2024, beginning exports to Europe and Asia with 72 containers shipped in its first year.
The cooperative operates across three main regions in Paraná and São Paulo and has invested in a storage facility and mill to support its growing operations. Around 300 farming families are members of CAPAL, ensuring traceability, consistent quality, and adherence to ABIC-certified standards. The farms, ranging from 5 to 100 hectares, benefit from the unique climate and altitude of these regions, which contribute to the distinctive flavour profiles of the beans.
CAPAL cultivates traditional varieties such as Mundo Novo, Bourbon, Catuai, Acaiá, and Caturra, combining generational farming knowledge with modern sustainability practices. Since 2022, the cooperative has implemented the Programa Capal de Gestão Rural (PCGR), a structured sustainability programme that includes annual audits of member farms. Each producer receives a diagnostic visit, and farms are evaluated across 117 criteria, covering soil and water management, biodiversity, emissions, and social practices, promoting responsible and high-quality coffee production.
YELLOW BOURBON
Yellow Bourbon is an Arabica variety originally from Brazil, renowned for its sweetness and complexity. Its golden-yellow cherries ripen more slowly than other varieties, allowing a higher concentration of sugars and flavours to develop.
This variety is prized for its rich, balanced profile, offering notes of ripe fruit and honey, with a gentle acidity that adds brightness to the cup. Grown at higher altitudes, Yellow Bourbon thrives in conditions that enhance its elegance and aromatic depth.
CATUAI
Catuai is a hybrid Arabica variety developed in Brazil in the 1940s, resulting from a cross between Mundo Novo and Caturra. Known for its disease resistance and high productivity, it is a favourite among Brazilian farmers. The compact plants facilitate manual harvesting and farm management.
Catuai’s flavour profile is generally balanced, with notes of toasted nuts and chocolate, complemented by soft sweetness and a gentle acidity, making it versatile and approachable.
MUNDO NOVO
Mundo Novo is an Arabica variety native to Brazil, naturally arising from a cross between Red Bourbon and Typica. It is characterised by tall, vigorous plants that offer high yields.
Mundo Novo has a rich and full-bodied cup profile, with notes of dark chocolate, almonds, and red fruits, supported by natural sweetness and mild acidity. It is valued for its versatility and ability to adapt to different climates and altitudes.
The cherries are carefully harvested and meticulously sorted before being laid out on traditional patios. Here, they undergo natural fermentation and drying for 7–10 days, allowing the sugars in the fruit to develop slowly and evenly.
This method enhances the inherent sweetness of the coffee while maintaining clarity and brightness, producing a clean, expressive cup that highlights the unique characteristics of each variety.
