 THE STORY BEHIND

The Aricha washing station is located in the Idido Valley of the Yirgacheffe district.  Between 650 and 700 small coffee farms produce this coffee in the Gedeo Zone, Yirgacheffe district, approximately 4 kilometers west of the town of Yirgacheffe. The Gedeo Zone is named after the Gedeo people who are indigenous to this area. These small coffee farmers deliver ripe cherries to Aricha mill where the cherries are sorted and then pulped, fermented for at least 24 hours under water and then placed on raised drying beds in thin layers. The coffee beans covered with the parchment are turned every 2 to 3 hours in the first few days to promote even drying. Four to six weeks later the beans are transported in parchment to Addis Ababa, the capital of Ethiopia, to be milled, graded and bagged prior to export
While many washed Yirgacheffes deliver the clean lemony cup profile, few are able to balance with unique floral qualities including jasmine and bergamot along with a slight peach note when the cup cools down.
